Backyard BBQ – Chicken Thighs

This grilled chicken recipe is a great one for those days when you have unexpected guests. Chicken thighs defrost quickly and cooking them is fast. The method for this recipe allows you to have time to spend with your guests.

Preparation of Chicken Thighs

  • 2 chicken thighs
  • 2 crushed garlic cloves
  • ½ tablespoon thyme
  • ½ tablespoon of packed dark brown sugar
  • 1 teaspoon salt
  • ½ cup of water

Mix the ingredients together in a plastic bag that closes well. Let the chicken thighs sit in the brine for two hours.

Preheat your gasgrill to 375 Fahrenheit. Make sure to have two zones. Read more about cooking zones on: How to control the temperature in your grill 
Take your thighs out of the bag and dry them well with a kitchen towel. Sear them 5 minutes on each side on the hot side of the grill. Make sure not to move them while they are searing.

Bring them to the cooler part of your grill for indirect heating. Bring the temperature in your grill back to 275 Fahrenheit. And let them cook for 15 minutes.
Mop them with your favorite barbecue sauce and let them cook for another 15 minutes. Mop them again and cook them until ready. In this case, it took another 10 minutes.
